An electric pizza oven offers a greater degree of control over the cooking temperature. This helps in making perfect pizzas each and every time — something that you need to do if you hope to please all of your customers. If you are in the process of selecting a new oven, then consider the following factors before making a purchase:
Oven Capacity
How many orders do you anticipate? If you have been in operation for a while, then this should be easy to gauge from the past months. If you have opening for the first time, then you will need to do a study of the demand in your area. Aspire for greatness but also be realistic so that you don’t overspend. The largest ovens can cost tens of thousands of dollars. Smaller ones are only a few hundred dollars.
Counter Top or Free Standing
This will mostly depend on the free space in your restaurant kitchen. If you have a small stall, then you may not have a choice but to use counter space to host your oven. If you have a large kitchen, then you may have room for a free standing oven which tends to have a bigger capacity. For ease of movement and maintenance, look for one that has wheels at the bottom.
Front Loading or Conveyor Type
Most ovens have a front loading design. You lower the front door and access the contents. This should work well enough for small operations. For larger restaurants, it might be beneficial to use a conveyor type oven where chefs place the raw doughs on one side and the cooked pizza comes out the other side for the servers to pick up. It’s a more seamless transition for those with the space for it.
Glass or Steel Front
For front loaders, glass allows the staff to see whether the pizza are done or not. They can quickly intervene if they see that the top has turned golden brown. They don’t have to keep opening the door to monitor the situation. However, glass is not a good insulator so heat is continually lost through the material. Steel doors have insulated walls keep the heat inside for faster cooking times. They may also match the rest of the kitchen equipment for a uniform look.
Individual Deck Control
Electric pizza oven feature individual temperature control for each deck. You can set them at different levels of heat according to the thickness of the crust and the amount of toppings.
